Spanakopita is a savory Greek pie made of crispy layers of filo pastry with a filling of spinach, rice, feta cheese, and fresh herbs --parsley and dill, all mixed together with Amfora extra virgin olive oil. Other spanakopita recipes vary in ingredients and proportions, but this is the simplest, best and purest. It is an authentic family recipe from Epirus. Yiayia (grandma) Maria makes the filo pastry herself, which is hardcore. Don’t worry, ours is ready-made.
